Frequently I'll fill the extra spaces with papers, elements, or journaling... mostly papers. I love the blocked look, and replacing those with papers helps me achieve that easier. I've been trying to use templates more and more now to get me out of my "how am I going to lay this out" rut, but like you, don't like templates because you have to use multiple photos.
